Now that I have a boy living in the house, I find myself becoming ever-so-slightly domestic. I have especially enjoyed having an excuse to cook. When I lived by myself, I couldn't really justify cooking a meal...so I typically lived on Lean Cusine and the Dillon's salad bar. But now...I love to cook. Marisa and I are even taking cooking classes at the Merc, where we have learned to make many delicious things. Pots de creme, sweet potato rice bowl with swiss chard, sun-dried tomato pasta, herb-crusted salmon, quinoa pilaf with dried fruits, sorbet, and many other delicious things. Next week we are taking an Asian wraps class, next Month it's Italian meals and, in May, early spring meals. I'm so excited. The best part is, the school district is paying for all of it as a part of our wellness incentive. Hooray to free cooking classes!

ore sickeningly cute things I've cooked lately. This was my Valentine's Day breakfast....heart-shaped French toast stuffed with cherry preserves and cream cheese. It was absolutely delicious...but I almost wanted to smack myself when I found myself attacking bread with a heart-shaped cookie cutter.
During spring break, I thought to myself that it would be fun to make some spring-themed sugar cookies. Three hours into the project, I was cursing myself for wasting so long on cookies that I just planned to give away. They turned out relatively cute though...and I've managed to give most of them away already.
These are my favorites...they are sushi candy that I made for my class the week that we studied Asia. The filling is rice crispy treat rolled with cherry Twizzlers. Then I wrap the log with green fruit roll-ups and slice it.
